This fine dining room inside the Bergland hotel runs a set menu that pulls ingredients from within 200km, herbs from the garden included, then filters them through a quietly Japanese lens. The dark, chic interior suits the ambition. Sölden is ski country, so the contrast between the mountain setting and the composed, contemporary cooking is half the point.
