A Michelin-starred contemporary Peruvian restaurant perched on the fourth floor of Malaga's grand neoclassical customs palace, now also home to the city's fine arts museum, which is a lot of building to share. The Buenos Aires-born chef runs two tasting menus that pull from the sea, the mountains, and local Andalusian produce, folding in South American technique with a precision that shows in the plating as much as the flavors.
