Marble-fronted and candlelit inside The Club Hotel & Spa, Bohemia is a fine dining room where white linen pops against dark wood paneling and cocktails in the bar count as part of the ritual. The kitchen, which holds a Michelin star, works with Jersey's fine produce and doesn't let technique get louder than the ingredient. The tasting menu, drawn from the chef's travels, is the reason most people are here, dressed up and pretending it's not a Tuesday.
