The restaurant sits one floor above Seoul's Majang Meat Market, which is less a detail than the whole point. Born and Bred is a butcher-led beef omakase built around Hanwoo, Korea's native cattle, selected and aged by someone who grew up inside the trade. Binchotan charcoal does the cooking with a restraint the beef seems to expect. It ranked 26th on the World's Best Steak Restaurants list, and the counter keeps seatings small enough that each cut arrives as a considered choice.
