A crêperie near the Marché des Lices from the chef who, in a move no one saw coming, spent years bringing Breton galettes to Japan, and brought a Japanese sensibility back with him. The room is modern and industrial with an open kitchen, and the buckwheat here is stone-ground, the eggs organic, the sourcing the kind you'd expect from someone who made a whole philosophy of the thing.
