Fries arrive in martini glasses, which tells you most of what you need to know about Buco. It's a gastro bar in Gouraud built around burgers and cocktails, launched by a Noma alumnus who apparently decided the humble cheeseburger deserved serious attention. Terracotta tones, an open kitchen, and a terrace keep things warm without trying too hard. It holds a spot on MENA's 50 Best Restaurants list, and the cocktail menu runs from negronis to mezcal espresso martinis.
