    A decommissioned military fortress overlooking the Bay of Palma, Cap Rocat spent its first life keeping watch and its second life doing the same, only now guests are doing the watching. The boutique hotel holds the Michelin Guide's 2 Keys. Suites carved from boxy utilitarian spaces land somewhere between austere and genuinely luxurious, the design restrained enough to stay out of the Mediterranean views' way. No one under 15, and closed through winter.
