    A former Department of Education building, all golden Edwardian sandstone and ornate bones, now holds one of Sydney's more considered luxury hotels. The restoration layers Aboriginal art and bush-scented spa products into what could easily have been a generic grand-hotel renovation. The 20-metre pool sits where an art gallery once stood, which feels about right. Ranked 12th on the World's 50 Best Hotels list, and holding a Michelin Key.
