The family pig farm and the French rugby team share a connection here, which tells you this is not a typical farm-to-table pitch. Two brothers run this traditional restaurant on the Dupont estate in the Pyrenean foothills: one farms the Noir de Bigorre pigs, one plays scrum-half for les Bleus. The menu leans into both, with pork prepared every which way and a grandfather's duck casserole that the whole table will order.
