The menu shifts constantly, landing somewhere between globally curious and quietly unfussy, with vegetables given real attention alongside the occasional surprise like trout roe on crispy polenta. The wine program is serious without making you feel underdressed for it. A 2023 James Beard nominee for Best Chef: Texas.
