A single tasting menu tracing human evolution from Africa through Atapuerca and ancient Rome sets the tone at this Michelin-starred fine dining room in central Burgos. Chef Miguel Cobo built the concept around the nearby Atapuerca archaeological site, and the kitchen takes it seriously without losing the plot. Upstairs, an art installation keeps the theme going for anyone who isn't ready to call it a night.
