The multicourse tasting menu here shifts concept entirely depending on what the chef is currently obsessed with, whether that's a music era, a stretch of personal history, or something harder to name. Counter is a small, intimate fine dining room with a Michelin star, and the themes change often enough that regulars come back just to see what's replaced the last version of it. Local farms supply much of the produce, and the beverage program keeps pace.
