Corn is flown in from Mexico and nixtamalized in house, which tells you most of what you need to know about this Mexican restaurant's priorities. Named for the Zapotec god of maize, it's a fonda-style spot where tortillas and quesadillas come from scratch, a hickory hearth does real work in the salsas, and the bar runs a margarita built on elote mezcal. The Michelin Guide awards it a Bib Gourmand, and the room fills up accordingly.
