The kitchen calls it "Bastard Italian Cuisine," which at least tells you upfront this won't be a Nonna's-recipe situation. The chef, who once cooked at the Argentine presidential residence, runs a tight à la carte that pulls Italian cooking toward something more personal and Argentine-inflected, keeping the flavour while ditching the trattoria formula. The rice-base pizza alone is worth the detour to Chamberí.
