A basement fusion restaurant born from a handshake between two of Tokyo's more restless kitchens, Den and Florilège. The name stitches them together with "kushi," the Japanese word for skewer, though nothing here comes on a stick. Expect Japanese-Western cooking that shifts constantly, tempura with sherry, sweetfish in a custard tart, dishes that exist once and never again. The kind of place where the menu is less a document than a mood.
