Heston Blumenthal's two-Michelin-star dining room inside the Mandarin Oriental takes its cues from England's oldest recipe books, then does thoroughly Heston things to them. The signature dish arrives looking exactly like a mandarin orange and turns out to be chicken liver parfait, which tells you everything about the register here. Guests even choose how much the servers explain, a thoughtful touch in a room that could easily lean on ceremony. It closes for good in early 2027.
