    Not a scrap of tartan anywhere on George Street, which for a New Town hotel is practically a manifesto. Eden Locke is an apartment-style hotel designed by a New York firm, and the muted pastels and modernist calm somehow read as more authentically Scottish than a thistle ever could. Every studio comes with a full kitchen, and the in-house café, Mayvn, draws a crowd that isn't staying the night.
