Tucked inside the Viñedos de Páganos winery in the Basque countryside, this tasting-menu restaurant shares its name with one of the estate's signature wines. Floor-to-ceiling windows frame the vineyards and mountains, so the setting does half the work before a plate arrives. The chef runs two menus, one rooted in tradition, one more adventurous, with some dishes crossing over between them in a loose, à la carte spirit that keeps things from feeling too ceremonial.
