A Japanese kamado, a wood-fired stove from another tradition entirely, sits at the center of this compact modern restaurant in Sète, where everything on the menu passes through fire before it reaches the table. The chef trained under some serious names in the Languedoc before landing here, and the cooking shows it without showing off. Southern French wines, guided by his partner in the dining room, keep things local.
