    A chef shaped by a tea-ceremony mother and a lacquer-artist father, who spent years abroad teaching shojin-ryori before returning home to Kyoto, named this Japanese restaurant after the swallow, a migratory bird he saw as a mirror of himself. The menu spans traditional Japanese cooking with the occasional Western thread woven in. The kind of backstory that could easily be precious, but the food keeps the conversation honest.
