A former joiner's workshop in Alsace that kept the wood and traded the sawdust for a Michelin-starred tasting counter. Chef Carole Eckert runs an open kitchen behind a long bar, cooking strictly seasonal, vegetable-forward food from the kitchen garden and local farms. The Scandinavian-spare room suits the cooking's precision, and the young team moves with the focused energy of people who mean it.
