    A Michelin-starred modern restaurant in the old heart of Valence, where chestnut wood tables and a carpeted floor give the room a warmth the chef seems to take personally, circling the dining room more than most. The kitchen carries the influence of a delicatessen-owning grandfather, then finishing schools with Anne-Sophie Pic and Joël Robuchon. The cooking is careful and quietly confident without making you feel like you're sitting an exam.
