French
Dishes still arrive under a silver cloche at this fine dining room in Valence, an old-school formality that suits the setting's thick carpets and softly lit floral arrangements. Anne-Sophie Pic, one of very few women to hold three Michelin stars, runs a single tasting menu that pivots between classical French technique and a deep affection for Japanese flavor. The room is hushed, the service is dressed up, and the whole experience takes itself seriously, as it probably should.
