Named for the ruffled trim on a flamenco dress, this contemporary restaurant sits one floor above a wine bar where, if you time it right, actual flamenco is happening below you. The chef works through the flavors of Granada province, local bread, Huétor peas, Segureño lamb, Riofrío caviar, a strange and charming mead-and-marigold note, all shaped into tasting menus. It holds a Michelin star.
