    Sitting on the edge of El Pardo, this rustically furnished restaurant feels genuinely removed from Madrid even though the city is minutes away. The kitchen keeps things traditional, leaning on the grill and sourcing fish daily from Pescaderías Coruñesas, a supply chain the regulars will tell you about unprompted. Rice dishes and good cuts of meat round out a menu that changes its tune very little, which is exactly the point.
