Guinea fowl, asparagus, and morel mushrooms suggest where the kitchen's head is at. There's a terrace out back when the weather cooperates, and the lunch crowd fills it early. A polished, quietly ambitious restaurant in central Bruges, where the cooking has craft to back up the confidence.
