A hotel built inside a shopping mall sounds like a pitch meeting gone wrong, but the warm wood and bronze throughout Fusion Original Saigon Centre work hard to create something closer to a city apartment than a retail afterthought. Some rooms position freestanding bathtubs directly facing the windows, with Notre Dame Cathedral in the middle distance. The in-house restaurant reworks Old Saigon flavors through techniques the chef gathered abroad, and lands somewhere without a tidy label.
