Ginza HARU CHAN Ramen

A ramen shop in Ginza where the chef, known by everyone as Haru-chan, has built her whole identity around a single bowl of shio ramen. The broth, clear and made from pork and dried sardines, is poured to the rim. Flat-pounded noodles give the whole thing a plump, satisfying pull, and the restaurant stays open between lunch and dinner, because the neighborhood actually needs it.
