Ramen counters, pho kitchens, hand-pulled and knife-cut: the noodle shops the critics and guides have singled out, ranked by the weight of the honors behind each bowl.

Eat, change section
  1. Rank 1. Mawn

    Southeast Asian Noodle Shop

Phila Lorn calls it a noodle house, which undersells the ambition considerably. The menu moves through Cambodian cooking, bright sour salads, curries, and cold noodles without much concern for borders, which is the whole point. It's a BYO, so walk in with a bottle under your arm and the cozy dining room feels less like a restaurant than someone's very talented friend's house. Lorn won the 2025 James Beard Emerging Chef award, and the room fills up accordingly.

  2. Rank 2. Kinoya

    Japanese Noodle Shop

Neha Misra ran a sold-out ramen supper club from her home for years before the demand outgrew her dining room. Now it's a casual izakaya and ramen shop where the noodles are still made from scratch, the broth runs rich and creamy, and the duck ramen uses every part of the bird. A Michelin Bib Gourmand and number two on MENA's 50 Best list. The ramen counter, with a view of the kitchen, fills up fast.

  3. Rank 3. Yu Zhi Lan

    Sichuan Noodle Shop

A four-room garden villa on a quiet leafy street, with just 18 covers and no menu to choose from. This intimate fine dining restaurant serves set menus built around chef Lan Guijun's signature Sichuan cooking, where a dish like hand-pulled Golden Thread Noodles arrives as something closer to a statement than a snack. Anthony Bourdain made it one of his first stops in Chengdu, which tells you roughly what kind of place this is.

  4. Rank 4. Nightshade Noodle Bar

    Vietnamese Noodle Shop

Uni custard with brown butter, red curry hollandaise, and a torch of cinnamon tells you immediately where you stand: somewhere north of Boston that plays by its own rules. Nightshade Noodle Bar in Lynn is a tasting-format noodle restaurant with a kitchen that treats cuisine borders as suggestions. The room is a black box, the playlist is loud, and the team is warm. Rachel Miller was a James Beard semifinalist in 2025, and the Times put it on their Boston list.

  5. Rank 5. Noodle in a Haystack

    Modern Ramen Shop

A ramen omakase in the Richmond where the noodle is the main character, not a supporting act. The team built their name through pop-ups and global competitions before landing in this small corner space, and the tasting menu shows the range, broths that shift from delicate to deeply rich across several courses. It runs at a fine-dining pace and price, so dress one notch up from your usual bowl-of-ramen energy.

  7. Rank 6. Jeju Noodle Bar

    Korean Noodle Shop

A counter seat at this intimate Korean noodle bar puts you close enough to watch the pork bone broth hit the bowl, which is half the point. The menu is short and the prices are low for a Michelin-starred kitchen in the West Village. Gochu ramyun is the draw, but the kitchen moves between broth, salad, and rice with enough range that nothing feels like an afterthought.

  8. Rank 6. Menya Rui

    Ramen Shop

The noodle machine has its own little vestibule off the dining room, which tells you where priorities lie at this 24-seat ramen shop. The chef spent years in Japanese noodle kitchens before opening here, and it shows in the tsukemen, thick cold noodles you dip into hot broth, and the brothless mazemen tossed in scallop or chile oil. Food & Wine named him a Best New Chef. The line out front moves faster than it looks.

  9. Rank 9. Abri Soba

    Japanese Noodle Shop

  10. Rank 9. Alley Mian

    Chinese Islamic Noodle Shop

A cook pulls and folds noodles to order in full view of the dining room, which sets the tone for everything at this small, no-reservations noodle shop near the Théâtre de la Monnaie. The broth is Lanzhou-style, built deep and left unadorned. Michelin gave it a Bib Gourmand, and the lunch queue most days makes the argument more plainly. Go early, go hungry, and don't expect to linger.

  11. Rank 9. Kisin

    Japanese Noodle Shop

  12. Rank 9. Koyote

    Japanese Noodle Shop

The chef spent time training in ramen shops in Japan before bringing the practice back to Salt Lake City, and the bowls at this counter-service ramen shop make that detour feel logical. No reservations, QR code ordering, and nobody minding either, because the chicken broth runs deep and the chashu pork is properly tender. Gyoza hold you over while you wait. The Michelin Guide has it selected, and the room fills fast on cold nights.

  13. Rank 9. Ramen Deigo

    Japanese Noodle Shop

  14. Rank 14. Akahoshi Ramen

    Japanese Noodle Shop

The chef spent a decade deep in ramen research on Reddit before opening this tiny Logan Square shop, and the menu reflects that obsessive focus: four ramens, a monthly rotating special, and nothing else. Everything, noodles through broth through tare, is made from scratch. Reservations drop and vanish within hours, which is its own kind of endorsement. Bon Appétit named it one of America's best new restaurants in 2024.

  15. Rank 14. Menkicchi

    Japanese Noodle Shop

  16. Rank 14. Soba Ichi

    Japanese Noodle Shop

The chef mills buckwheat in-house, mixes the dough by hand, and cuts every noodle, which is the kind of dedication that explains a 45-minute wait at a noodle shop in deep industrial West Oakland. The good news is you wait in a gorgeous bamboo-fountain courtyard designed by a Zen Buddhist craftsman, which softens the blow considerably. Soba earns a Michelin Bib Gourmand, and they cap orders at 100 a night, so arriving early is its own reward.

  17. Rank 14. Toy

    Noodle Shop

Toy is a small ramen bar near Bastille that skips the tonkotsu most of Paris defaults to and builds its bowls on a double broth with smoked eel dashi, plus a cold bowl for the heat-averse. The noodles are made by hand each day, and the menu is short enough to read in one breath. Bowls run about €20, which is Paris for noodles. The sharing plates exist, but the bowls are filling enough that you can ignore them.

  18. A Lao noodle parlor that grew out of a single chicken soup too popular to stay on one menu, Bar Sen sits next door to its sibling restaurant in a dark, lively room with a sunny patio out back. The khao piek sen, thick chewy rice noodles in a rich, almost milky broth, is the founding idea and still the move. Cold beer is the drink of choice here, which tells you everything about the vibe. The chef earned a 2026 James Beard nomination and a spot on the New York Times Restaurant List.

  19. Rank 18. Domu

    Creative Japanese Noodle Shop

Starburst light fixtures bounce off a marble bar and concrete floors at this ramen shop in a quiet Orlando neighborhood. The chef, a James Beard semifinalist with a Michelin Bib Gourmand, builds bowls that swing between classical Japanese technique and flat-out invention, the kind of menu where the dish names alone tip you off that things are going to get interesting. Order ramen, then maybe the blistered shishitos while you wait for the second bowl you'll talk yourself into.

  20. Rank 18. Kamonegi

    Japanese Noodle Shop

Hand-rolled soba noodles are the reason to come to this small, wood-trimmed Japanese noodle shop tucked into Fremont. The chef learned the technique from her grandmother and then kept going, pairing the buckwheat noodles with foie gras tofu or tempura-fried Oreos alongside the classics. A James Beard nominee, and the kind of place that earns a long wait without making any fuss about it.

  23. Rank 22. Pho 777

    Vietnamese Noodle Shop

  24. Rank 22. Tei-An

    Japanese Noodle Shop

The house-made soba is the point here, though the menu at this elegant soba house in the Arts District runs wide enough to spark a real argument about what to order. Cold or hot noodles arrive with seasonal toppings that range from strictly traditional to a Bolognese that has no business working as well as it does. Grilled freshwater eel comes with its crisped spine, exactly as it would in Japan. The Michelin Guide has it listed among its selected restaurants in Dallas.

  25. Rank 22. Xiao Bao

    Chinese Noodle Shop

A diner-style Asian restaurant where a giant strawberry guards the door sets the tone for everything inside: Formica tabletops, red velvet couches, and a menu that bounces between hand-pulled noodles topped with brisket and a la zi spiced smash burger on a bao bun with beef fat fries. The retro fever-dream aesthetic is very much the point. The New York Times named it among Nashville's 25 best restaurants.

  26. Rank 26. Hà VL

    Vietnamese Noodle Shop

No website, no Instagram, just a strip mall address and a fan-run page to track the daily rotating soups. Hà VL is a Vietnamese noodle shop where the bowls do all the talking, and the fermented fish noodle soup alone explains why regulars treat the weekly schedule like a train timetable. A 2024 James Beard semifinalist, and the kind of place the New York Times flies someone to Portland specifically to write about.

  27. Boat noodles are the draw at this Thai noodle shop tucked into a Hollywood strip mall, where the broth runs thick, dark, and serious, and you pick your protein, noodle type, and heat level before the bowl hits the table. The portions are small by design, which is the shop's way of nudging you toward ordering two. A Michelin Bib Gourmand, and on the LA Times 101 list. The stir-fried holy basil with pork is not an afterthought.

  28. Rank 26. PhởHolic

    Vietnamese Noodle Shop

Large metal bowls of steaming pho arrive trailing the scent of anise, and the broth is sweet enough that people come back for it the way some people return to a therapist. This Westminster pho shop splits its menu into beginner and adventurer sides, with noodle style and cut of beef chosen at the counter. The Los Angeles Times named it among California's 101 best restaurants, and the Michelin Guide has it listed too. Bring patience; the room fills fast.

  30. Kalguksu noodles in a beef bone broth that tastes like it has been running since before you were born, plus dumplings the size of a small fist, handmade at the entrance while you watch. This is an old-school noodle shop in Bukchon, cash-and-carry in spirit, with queues that form well before lunch and don't really stop. The Michelin Bib Gourmand hasn't helped the line situation. Come mid-afternoon if you'd like a seat without negotiating.

  31. Rank 29. Kajiken

    Japanese Noodle Shop

The bar seats face a glass-walled noodle room where someone is forever converting spools of dough into the springy, house-made strands in your bowl. Kajiken is a Japanese soba shop specializing in aburasoba, a brothless style where oils and sauces do the heavy lifting instead. The concentrated flavor catches you off guard the first time. A table caddy of vinegar, hot sauce, and powdered nori lets you keep adjusting until it's exactly right. Expect a line at peak hours.

  34. Rank 35. Bánh Mì Ba Le

    Vietnamese Noodle Shop

The bread at this Fruitvale bánh mì shop is the whole argument: crackly crust, pillowy interior, just enough chew. Two dozen sandwiches fill the menu at prices that haven't moved in years, a minor miracle in the Bay Area. The pork meatball and egg is the one regulars point to, peppery and rich. Lines stretch out the door most days, but the staff moves them fast enough that you'll barely notice.

  37. Rank 35. Gen

    Japanese Noodle Shop

A soba shop tucked inside a sake brewery, where the water used to brew rice wine also goes into the noodles. The neighborhood name translates loosely to "pure water town," which tells you most of what you need to know. The chef hand-grinds buckwheat in a stone mortar and makes the noodles entirely from buckwheat flour. Order the mizusoba, noodles dipped in cold water alone, which is apparently how farmers tested a harvest and how you'll understand the point of all that grinding.

  41. Rank 35. Kodawari Ramen - Yokochō

    Japanese Noodle Shop

The wheat for the noodles is grown and milled in-house, which is either very dedicated or a little obsessive, and probably both. This ramen shop on rue Mazarine dresses itself up as a Tokyo back alley, lanterns and all, and somehow it doesn't feel embarrassing. Broths run from clean shio to deeper shoyu, and the black sesame kurugoma bowl is the one regulars keep coming back for. It holds a Michelin Bib Gourmand. Go early or late; midday it fills fast.

  43. Rank 35. LanZhou Ramen

    Chinese Noodle Shop

Hand-pulled noodles are the whole point here, stretched to order and served in broth or dry, inside a no-frills shopping center on Buford Highway. This is a noodle shop that pulls Sichuan dishes into the mix alongside the namesake soups, and the roast duck bowl, bone-in and bobbing with bok choy, tends to stop conversation. A Michelin Selected restaurant with a James Beard semifinalist nod, it draws a serious lunch crowd that knows exactly what it's ordering before it sits down.

  44. Rank 35. Lotus Noodle Bar

    Noodle Shop

A noodle bar that started as a pop-up and earned a permanent address in St. Augustine, Lotus is the kind of ramen spot where the broth gets made with three-month Kyoto white miso and the dessert lands a quenelle of caviar. The chef picked up a James Beard semifinalist nod in 2026, which tracks. Grab a stool at the noodle bar and let the duck tan tan ramen do what it came to do.

  49. Rank 35. Ramen Break Beats

    Japanese Noodle Shop

The chef used to be a DJ, and the name isn't just branding: the break-beats philosophy shapes the playlist and, apparently, the pacing of a bowl. This Meguro ramen shop holds a Michelin Bib Gourmand, and the draw is a soy-sauce broth that runs clear and clean in a way that makes you wonder what everyone else is doing with theirs. Compact, focused, the kind of counter you leave slightly amazed that lunch cost so little.

  50. Rank 35. Ramen Nagi

    Japanese Noodle Shop

The line snaking through downtown Palo Alto at noon is the surest sign this ramen shop is doing something right. A Tokyo-based chain with a cult following, it serves rich tonkotsu broth in five varieties, each bowl customizable down to noodle firmness and salt level. The red king, centered with a blazing eye of miso pork and cayenne, is the one people queue for. No reservations, but you can order while waiting, so you sit down to a bowl almost immediately.

  53. Shang Artisan Noodle is a casual noodle shop in a Flamingo Road strip mall, where the chefs pull and cut dough in an open kitchen that works better than most Strip entertainment. Counter seats put you inches from the action, and bowls cost less than a vodka soda on the Strip. Go in as a group and count heads on the way out, because someone will be stuck at the window, hypnotized by the spinning noodles.

  55. Rank 35. The Honey Paw

    Modern Pan-Asian Noodle Shop

Communal tables and mismatched plates set the tone at this noodle bar on Middle Street, where the menu wanders confidently through Asia with a New England detour. Lobster wontons land in seafood curry; smoked lamb khao soi shows up alongside whatever happens to be coming off the wok that day. The room is tight, which concentrates the energy nicely. A James Beard semifinalist for Best Chef: Northeast in 2024.

  60. Rank 61. Ivan Ramen

    Ramen Shop

Ivan Orkin, a New Yorker who built his reputation running ramen shops in Tokyo, brought the whole project back home to the Lower East Side. The ramen shop is compact and casual, counter seats facing the kitchen, with a menu that mixes Japanese technique and New York personality without making a big fuss about either. The tsukemen, where you dip thick fresh noodles into rich pork broth and season to taste, rewards the curious. Grub Street named it one of the city's best restaurants for kids.

  61. Pyongyang naengmyeon, the cold noodle dish from the North that Seoul has quietly claimed as its own, is the reason to come here. This Korean noodle shop in Gangnam serves the style straight: pale, chewy buckwheat noodles in a broth so clear and restrained it almost seems like a dare. The chef spent two decades in older Pyongnaeng houses before opening this one, and mandoo and bulgogi round out a menu that doesn't stray far from the classics.

  62. Rank 61. Tamawarai

    Japanese Noodle Shop

The chef mills his own buckwheat, some of it grown in his own garden, to coax out an aroma that pre-ground flour can't touch. This quiet soba shop in Jingumae serves coarse-ground seiro with a wild, earthy depth that makes the usual lunch-counter bowl feel like a different food entirely. Evenings shift to a prix fixe format with small courses built around buckwheat in forms well beyond the noodle.

  64. Rank 61. Yume Ga Arukara

    Japanese Noodle Shop

The stainless steel noodle machine in the window tells you everything: this is a udon shop, and udon is the only thing on the menu. The thick wheat noodles come out smooth and just slightly chewy, served in dashi broth hot or cold, spicy or not, with fatty beef, scallions, and tempura bits. The Seaport location has room to breathe after the original Cambridge spot became famous for its lines. The New York Times put it on their 25 best in Boston list.

  68. Rank 68. Motonobu Udon

    Japanese Noodle Shop

A bright, buzzy udon shop on East Hastings where the noodles are handmade and cut to order, which you can watch happen before your bowl arrives. Go hot or cold, classic or specialty, and don't skip the add-ons, because a pile of tempura on top is basically the whole point. The staff will improvise if nothing on the menu fits. A Michelin Bib Gourmand, which in a room this casual and affordable feels almost cheeky.

  69. Rank 68. San Dong Noodle House

    Taiwanese Noodle Shop

San Dong is a Taiwanese noodle house on Bellaire Blvd where the forks, spoons, and bowls are all the to-go kind, and you grab your own containers off a shelf like it's a very small hardware store. The menu is beef noodle soup and pan-fried or steamed dumplings, and a full meal for two comes in under $20. Bring cash, tip the cashier, and don't expect much elbow room.

  73. Rank 72. Mensho Ramen

    Japanese Noodle Shop

A ramen shop where the broth might arrive laced with matcha or built around five preparations of garlic in a single bowl. Mensho brought its Japanese noodle concept to Arizona with this Mesa outpost, a light-wood room centered on an open kitchen where handmade noodles go into thick, creamy broths. The kind of place where the bowl keeps revealing itself as you eat, which is a polite way of saying you'll want to stay longer than you planned.

  74. Rank 75. 100.1.Pyeongnaeng

    Pyongyang Korean Noodle Shop

Pyongyang-style naengmyeon is a notoriously spare dish, and the broth here is where the kitchen stakes its reputation: pale, delicate, and quietly complex in a way that rewards slow sipping. This is a cold noodle restaurant in Suyeong-gu, with bulgogi and mandu on the side for anyone who needs something more substantial, or an excuse for a drink. The Michelin Guide recognized it with a Bib Gourmand, which tracks for a place this focused on getting one thing exactly right.

    Japanese Noodle Shop

The chef trained as a soba craftsman before wheat pulled him toward udon, and that soba discipline shows in every bowl at this small udon shop in Hiranomachi. Grain is stone-ground in house, then rolled and boiled to order. The Michelin Guide awarded it a Bib Gourmand. Noodles arrive with salt and wasabi rather than the usual dipping sauce, and the meal closes with udon water instead of soba water, a small but pointed statement of allegiance.

The shop curtain out front was painted by the chef's grandmother, a calligraphy teacher marking her grandson's leap into independence. Inside, it's a soba shop with counter seating that carries over from his years cooking kappo, and the mood is unhurried and warm. The meal moves through conger eel jelly and duck stew before arriving at 100% buckwheat noodles milled in-house, with tempura fried to order alongside. A Michelin Bib Gourmand.

A sign at this old-school Kyoto soba shop declares that soba is medicine, and the kitchen takes that seriously enough to frame the whole menu around yakuzen, the idea of food as remedy. The noodles are buckwheat-dark and earthy, and the Atsumori-soba arrives straight from the pot, kept warm over a bamboo steamer, with hot dipping sauce loaded with Kujo green onion, egg, and wasabi. The Michelin Guide awarded it a Bib Gourmand.

This is an old-school soba shop in the old Edo neighborhood of Ryogoku, where the crockery, the interior, and the general atmosphere all feel like they've been quietly refusing to modernize for a very long time. Japanese Noodle Shop

Tucked into an easy-to-miss strip mall in Buena Park, this compact ramen shop seats maybe twenty people in a room that skips every non-essential, including ambiance. The menu is short and ramen is the clear center of gravity, from a rich, creamy spicy red miso to a lighter chicken broth that holds its own. The Michelin Bib Gourmand makes sense the moment the bowl arrives. Pork buns float in quietly and do their job.

  246. Rank 75. Ramen Gaijin

    Japanese Noodle Shop

House-made noodles are the reason Sebastopol has a ramen shop worth the detour. Ramen Gaijin is a lively izakaya pulling Sonoma County produce into a pretty traditional Japanese frame, and the Michelin Guide gave it a Bib Gourmand for the effort. The shoyu is clean and careful; the tantanmen runs rich and spicy with pork belly chashu. Counter seats face the kitchen, which is where you want to be.

  247. Rank 75. Ramen Hayato

    Japanese Noodle Shop

A ramen shop that built its following around three versions of the form: soy sauce, salt, and miso. The soy sauce bowl runs a double stock, meat and seafood layered together, though regulars eventually find their way to the off-menu version that drops the seafood and goes pure meat. The chef grew up in Hokkaido and trained in Sapporo, which explains the miso's pull. The Michelin Guide has given it a Bib Gourmand, so the lines move accordingly.

A ramen shop in the basement of Semba Center where the chef has spent years chasing a single perfect bowl of shio soba. The broth pulls from fish, shellfish, and chicken, and the seaweed on top carries enough brine to make you think of open water. Noodles are high-hydration and hand-kneaded in feel, and three kinds of chashu arrive without apology. It holds a Michelin Bib Gourmand, which for a basement ramen counter feels about right.

  249. Rank 75. RAMEN MATSUI

    Japanese Noodle Shop

A husband-and-wife ramen shop in Yotsuya where the division of labor is gospel: he handles the noodles, she finishes each bowl with spring onion and fermented bamboo shoots. The broths run soy, salt, and dried sardine, built on chicken or seafood dashi with a pour of rice sake for aroma. Hokkaido kombu, scallops, and flour all nod to the chef's home prefecture. The Michelin Guide awards it a Bib Gourmand, and the line outside most days explains why.

  250. Rank 75. Ramen Touhichi

    Japanese Noodle Shop

The chef named the place after the house he was born in, and he runs the counter like it. The Michelin Guide awarded it a Bib Gourmand. Come for the clean, focused bowls and a cook who has very clearly thought about this longer than you have.

The counter seats are the point: you watch the chef parboil, wash, and plate with a quiet, unhurried precision that makes the whole thing feel meditative. Four fifths of the score is the awards it's won, weighted by who gave them: a Michelin Key outweighs a listicle. The last fifth is where it is: the ranked places to eat and things to do around it, and how safe the country is. When you sort by what's nearby, distance from you changes the order, never the score.

        Do Score

The score comes from the awards it's won, weighted by who gave them: a Michelin star outweighs a listicle. When you sort by what's nearby, distance changes the order, never the score.

          Best Place Score

The Best Place Score rates the area around a point, not any one place. The places are 60% of it: the best of what's within reach, weighed by distance. The setting is the other 40%: how life goes in that country (how people rate their own lives, how long and how well they live, how safe they are) and what it's like right there (the air, and the weather). If the score looks low, we probably haven't found enough critics out here yet.
