Buckwheat noodles made fresh every morning from Bongpyeong flour and Bigeumdo sea salt are the draw at this old-school noodle shop in Jung-gu, which has been feeding Seoul a bowl at a time for longer than most of its regulars care to count. The memil-guksu arrives topped with seasoned vegetables, egg ribbons, and a sweet-spicy sauce. The wheat noodle soup with fishcake is the move when you want something hot and brothy.
