Buckwheat Noodles
Buckwheat noodles made entirely from scratch, with flour sourced and milled by the chef himself, are the reason this memil-guksu shop near Namdaemun has followed its regulars across multiple moves and still fills seats. The broths are clean and fragrant in that way only hand-worked buckwheat manages. Pork shoulder dumplings and jeyuk round things out for the table that can never order just noodles. The Michelin Guide awards it a Bib Gourmand.
