Rocks and trees inside a third-floor dining room set the tone for what follows: a Michelin-starred Mediterranean restaurant where the vegetables and herbs come from the chef's own family farm about forty kilometers outside Seoul. The kitchen turns that produce into dishes with a distinctly personal take on Mediterranean cooking, seasonal and unhurried. It's a long way to go for a salad, obviously, but the farm isn't a talking point so much as the whole premise.
