Kalguksu noodles in a beef bone broth that tastes like it has been running since before you were born, plus dumplings the size of a small fist, handmade at the entrance while you watch. This is an old-school noodle shop in Bukchon, cash-and-carry in spirit, with queues that form well before lunch and don't really stop. The Michelin Bib Gourmand hasn't helped the line situation. Come mid-afternoon if you'd like a seat without negotiating.
