The chef is a devoted believer in soba-mae, the custom of drinking sake and picking at small plates before the noodles ever arrive, so expect baked devil's tongue in miso and simmered beef sinew before a single strand hits the bowl. This old-school soba shop does 100% buckwheat, cut thin, with dipping sauces running from sesame to curry. Tempura follows the seasons. The Michelin Guide awards it a Bib Gourmand, which tracks.
