Noodles
A ramen shop in the basement of Semba Center where the chef has spent years chasing a single perfect bowl of shio soba. The broth pulls from fish, shellfish, and chicken, and the seaweed on top carries enough brine to make you think of open water. Noodles are high-hydration and hand-kneaded in feel, and three kinds of chashu arrive without apology. It holds a Michelin Bib Gourmand, which for a basement ramen counter feels about right.
