A pho shop in Bloomingdale where the chef's background in butchering shows up in the bowl: the bone-in rib, brisket, and beef shank combinations are the point, and the torched bone marrow on top is not subtle. No reservations, no host stand, just a touchscreen or a QR code and a counter seat if you're lucky. The broth is long-cooked and serious. A Michelin Bib Gourmand, and the salted lime soda is the right call.
