The buckwheat comes from the chef's home region of Aizu, and the menu runs deep enough that there are drinks and snacks to graze through while you wait for your bowl. Tempura rounds out the table if you want it. The Michelin Guide awarded it a Bib Gourmand, and the line suggests locals took the hint.
