Chukasoba Uemachi
Noodles
A noodle shop in Osaka's Uemachi upland where the curtain hanging at the entrance was lettered by a Living National Treasure, which sets the tone pretty squarely. The broth builds on a meat base, deepened by dried fermented fish and crunchy sardines, and the noodles are made in-house, kneaded for a finish with some resistance to it. The Michelin Guide awards it a Bib Gourmand, and the neighborhood clearly agrees.
