This noodle shop earned a Michelin Bib Gourmand for the kind of cooking that doesn't need much explanation: a clean, umami-forward broth, chewy noodles with a faint nuttiness, and oxtail soup that has clearly been on the stove since before you woke up. Simple room, serious bowls.
