The line outside is part of the deal at this ramen shop in Busan's Haeridan-gil, a Korean outpost of an old-school Fukuoka institution. The tonkotsu broth simmers until the pork bones give up everything, turning the soup milky and rich without tipping heavy. You can dial in your noodle firmness, add raw garlic, or spike it with chili. If it runs salty, ask for plain broth to let it down. A Michelin Bib Gourmand.
