Iwa is a Japanese omakase counter in Haeundae where the balance of sushi, sashimi, and cooked dishes shifts depending on what came in and how long each fish has been resting. The result is a tasting menu that changes its shape visit to visit, driven by a process that is, apparently, proprietary.
