Sobakiri Gaku
Noodles
A soba shop where the noodles arrive cold on wicker baskets, not in broth, so you actually register the grain's fragrance and that particular firm texture the chef chases. The noodles are kneaded ni-hachi style, twenty percent wheat, for a faint translucency. The dipping sauce carries a Kanto richness from its kaeshi base. Counter seating only, natural materials, no fuss. The Michelin Guide gives it a Bib Gourmand.
