A kappo restaurant in the Naniwa tradition, where the meal opens with a combination platter of seafood, vegetables, and sushi before moving through grilled and simmered dishes alongside the occasional bisque or frites. The chef takes requests, and not in a grudging way: tell him how you like something and he'll cook it that way, because his mentor apparently taught him that tailoring a dish to the diner is the whole point.
