Homemade Ramen Muginae
Noodles
A ramen shop in a residential Shinagawa pocket where the queue forms before the kitchen even wakes up. The broth is built on soy sauce, salt, and dried sardines, and the noodles are made in-house. The name, Muginae, means wheat seedling, the chef's quiet wish that the place would push through adversity and grow. The Michelin Guide gave it a Bib Gourmand, and the neighborhood has never really recovered from the attention.
