A former pastry chef who pivoted hard to soba, and the discipline shows. This quiet lunch-only soba shop in Kita-ku serves thin-cut buckwheat noodles ground in-house, fragrant and clean on the palate. Small plates of braised greens and pickled vegetables keep the sake company, and the sake list leans deep into local producers. Weekday lunches tend to stretch pleasantly long here. The Michelin Guide has awarded it a Bib Gourmand.
