Pyongyang naengmyeon is the whole reason to be here, a cold buckwheat noodle soup with a broth built on aged sea salt and Korean beef that tastes quieter and more deliberate than you expect. This old-school Yeouido noodle house has kept the same approach across generations without apparent interest in fanfare. The Michelin Guide awarded it a Bib Gourmand. Come early or brace for a lunchtime queue that tells you everything about the regulars' loyalty.
