  1. The wheat for the noodles is grown and milled in-house, which is either very dedicated or a little obsessive, and probably both. This ramen shop on rue Mazarine dresses itself up as a Tokyo back alley, lanterns and all, and somehow it doesn't feel embarrassing. Broths run from clean shio to deeper shoyu, and the black sesame kurugoma bowl is the one regulars keep coming back for. It holds a Michelin Bib Gourmand. Go early or late; midday it fills fast.
