Sanuki Noodles
The sound of a knife on a wooden board comes every time someone orders, because the Sanuki udon here is cut fresh to each customer. This is a small, serious udon shop where the noodles' springy texture is clearly the whole point, and the Michelin Guide has given it a Bib Gourmand to say so. The broth draws on dried, smoked sardines and light soy sauce, and tempura or cold options round out a short, focused menu.
