A Seoul pork soup shop where dwaeji gukbap gets unusually careful treatment. The broth, made from black pigs raised in the Jiri Mountain region, runs clear and clean, closer to gomtang than the milky versions elsewhere. Hot broth is ladled repeatedly over the rice until each grain absorbs it, which sounds fussy until you taste the result. The Michelin Guide gave it a Bib Gourmand, and the lunch crowd doesn't seem surprised.
