The chef farms his own buckwheat, and the dough doesn't get kneaded until you're seated, which sets the pace for everything that follows. This is a soba-only restaurant in the Jodoji hills of Sakyo-ku, with a menu that is exactly as narrow as that sounds. The thick-cut juwari noodles, pure buckwheat with no binder, are built for chewing slowly. The Michelin Guide has given it a Bib Gourmand.
